Recipe of soup:
Moong dal and palak soup:
(A very healthy soup specifically curated for pcod patients that regulates the hormonal imbalance and many complications woven with it)
Cooking time: 10 minutes
Serves: 4
Ingredients :
- 1 cup boiled and blended spinach puree
- 1 cup boiled and blended moong dal ( moong dal soaked for 20 minutes)
- 2 cups water
- 1/2 tsp olive oil/ any edible oil
- 1/2 tsp cumin seeds
- 4 to 5 curry leaves
- 2 tbsp or 10 to 12 no pine nuts or almonds ( flakes/ chopped)
- salt to taste
- 1 tsp black pepper powder
- 1 tbsp lemon juice
- 2 tbsp chopped coriander, water as required
Method :
Heat the oil in a pan and add cumin seeds and allow them to crackle and add curry leaves to it and saute till fragrant.
Add pine nuts or chopped almond or flakes to it.
And roast it till light golden brown.
Add moong dal and palak puree to it.
Adjust the water to set the consistency and boil it for 5 to 6 minutes.
Season it with salt and pepper. Finish it with lemon juice and garnish it with chopped coriander and turn off the flame and serve this healthy soup hot.
